Introduction

We love this soup! But we make it without putting any salt in it, so I wanted to recalculate the recipe to show the difference. We love this soup! But we make it without putting any salt in it, so I wanted to recalculate the recipe to show the difference.
Number of Servings: 8

Ingredients

    2 cups dry Great Northern or other dry white beans
    1 qt water
    1 qt 99% fat-free, low sodium chicken broth
    (Try with Low sodium Vegetable broth to make vegetarian instead!)
    3 Tbsp. olive oil
    2 garlic cloves
    4 Tbps chopped parsley
    1/2 tsp white or black pepper

Directions

Place Beans in large Soup pot. Cover with Water and bring to boil. Cook 2 minutes. Remove from heat. Cover pot and allow to stand for 1 hour. Drain, discarding water.
Combine beans, water, and chicken broth in slow cooker.
Saute garlic and parsley in olive oil in skillet. Stir in slow cooker.
Add pepper (I used white pepper.)
Cover and cook on Low for 8-10 hours or until beans are tender.
