Introduction

My husband, who fears all things vegetable admitted that this wasn't bad. This makes enough for a crowd; or lots of leftovers for quick meals. Serve with warm cornbread. Ingredients

    2 Tbsp Olive Oil
    1 Medium Onion, diced
    1 12oz pkg Smart Ground Veggie crumbles
    1 16oz can Pinto Beans
    1 16oz can Red Kidney Beans
    1 16oz can Great White Northern Beans
    1 32oz can Crushed Tomatoes
    4 Tbsp Chili powder
    2 Tbsp Ground cumin
    1/4 tsp Ground coriander
    Dash of Cayenne pepper sauce

Directions

Dice onion and saute in olive oil until transparent in a large pot. Add Veggie crumbles, beans, tomatoes and seasonings. Simmer for 20-30 minutes to blend flavors.
