Introduction
This is a soup that I've always made from scratch but not always with fresh ingredients. The ingredients can be from frozen, dried, canned or fresh. It's quick to make and can be made light or very chunky according to taste preference. This is a soup that I've always made from scratch but not always with fresh ingredients. Ingredients
-
* Pacific Natural Foods Organic Low Sodium Vegetable Broth, 1 cup, 4 serving
* Del Monte Diced Tomatoes, No Salt Added, 0.5 cup
* *Green Giant Garden Vegetable Medley (Frozen), 1 cup
* Red Potato, 100 grams
* Beans, white, 1 cup
-- Add any type of small pasta or noodle if you like. I usually make it with curly/spiral multicolored pasta that gets its color from vegetables. It makes it very colorful and tasty. This will add some carbohydrates and some calories. Not sure how much.
Directions
1. Start the broth in a large pot. Add some broth and also some water as well as the water from the diced tomatoes.
2. Slice the potatoes in thin squares or strips.
3. Add the potatoes and noodles (optional) at roughly the same time.
4. Wait for the potatoes and noodles to get soft.
5. Add beans and vegetable medley.
6. Add the actual diced tomatoes last.
Serve with bread, crackers or by itself.
Enjoy.
