    1 - Stove Top Stuffing, Chicken (dry 8 oz package)
    1 - Eggplant unpeeled (approx 1-1/4 lb)
    1 Can - Chicken Broth, Swanson 99% fat free, no MSG, 14 oz


Preheat oven to 325 degrees F.

Slice eggplant into about 1/4 inch slices.

Place a layer of dry stuffing mix on the bottom of a 8x8 baking dish, then a layer of eggplant slices, repeat and end with stuffing mix.

Gently pour the can of broth over the top of everything.

Cover with foil and bake for 30 minutes until eggplant is soft and stuffing is moist.

Makes 6 generous servings.
