Ingredients

    6 Bonels, Skinless Chicken Thighs
    3 cups diced celery
    1 cup diced onion
    2 carrots, diced (aprox. 1/2 cup)
    8 oz Mushrooms, chopped (aprox. 1 cup)
    1 10 oz package of fresh spinach
    .5 cup pearled barley, uncooked
    Salt & Pepper to taste

Directions

Chop chicken into bite size pieces. Add to pre-heated dutch oven or other heavy bottomed pan. Add vegetables and saute until chicken is cooked. Add spinach and broth, bring to a boil, add barely. Cover and Cook on low heat until barley is done. Makes 6 2 cup servings
