Ingredients

    Chickpeas (garbanzo beans), 2 cup
    *Goya Dark Red Kidney Beans, 2 cup
    Cannellini Beans (aka white kidney beans), 2 cup
    Carrots, cooked, 1 cup slices
    Onions, raw, 2 cup, chopped
    Garlic, 3 cloves
    Sweet peppers (bell), 2 cup
    Jalapeno Peppers, 3 pepper
    *Cumin seed, 1 tbsp
    Pepper, black, 1 tbsp
    Olive Oil, 0.25 cup
    *Del Monte Petite Cut Diced Tomatoes, 4 cup
    *V8 spicy hot, 12 oz

Directions

Sautee olive oil, garlic, onions, peppers, carrots, until soft. Bring remaining ingredients to bubble, stirring constantly, and simmer on low for 45 minutes.

Serve with or without bread and sharp cheddar
