great tasting and filling pancakes that you "start" the night before with Sourdough starter. great tasting and filling pancakes that you "start" the night before with Sourdough starter.
Number of Servings: 6


    2 cups white, unbleached flour
    2 cups water
    2 large eggs slightly beaten
    1Table spoon sugar
    1 tsp salt
    1 tsp baking soda


Do not use any metal bowls or utensils when making this recipe, use glass, plastic or wood. The evening before..... take 1/2 cup of sourdough starter and put in a large bowl. Add 2 cups of flour and 2 cups of warm water. Mix well, cover loosely and let set overnight in a warm spot , free from drafts. The next morning take 1/2 cup of this mix and put back into the sourdough starter jar. Now take the bowl with the sourdough "sponge" and add 2 large eggs, 1 Tablespoon of sugar and 1 tsp of salt. Mix well. Put one Tblsp of this mix in a small cup and mix in 1 tsp of baking soda. Now add this back to the rest of your batter and mix well. To make one pancake, pour 1/4 cup of batter onto a medium hot griddle sprayed with "PAM" cooking spray. Cook until most bubbles have popped and flip to other side. ( Serve with your favorite topping, mine is homemade raspberry jam.) This should make 2 , four inch pancakes per serving!
You can make this with 1 egg, but it taste great with two.
( to make waffles, add 2 Tblsp of oil to the batter before frying, but remember to add extra calories)
