    1 tbsp olive oil
    4 Boneless Skinless Chicken Thighs
    2 green peppers chopped
    1 Onion chopped
    2 cloves Garlic
    1 large can Black olives
    1 can 28 oz diced tomato


Place all ingredients in a 9*9 baking dish
Add desired herbs (I like 2 tbsp Basil)
Bake at 350 for 1 hour
Serve over Pasta or Rice
Serves 4

  • I have another recipe I'm making this week that calls for black beans...I accidentally put that in this recipe instead of black actually turned out ok (I don't like olives anyways)..will def consider making this again - 1/26/11
