Ingredients

    1 lb skinless, boneless, Chicken breast
    Nonstick Cooking Spray
    Italian Seasoning such as: Oregano, Thyme, Garlic, Basil, Marjoram
    1/3 cup Parmesan cheese, divided
    1 cup Wild rice

Directions

Cut chicken into 4 oz servings. Place chicken into plastic bag or cover with plastic. Tenderize Chicken until it reaches desired thickness. Spray skillet with nonstick cooking spray, and heat skillet. Place chicken into skillet. Sprinkle with Italian seasoning and 1/4 Parmesan cheese. Brown chicken on both sides, adding more cheese and seasoning. Add chicken broth and Wild Rice. Make sure rice is completely covered in broth. Heat until it just starts to boil. Reduce heat and cover. Cook until liquid is absorbed, stirring once or twice. Sprinkle with remaining Parmesan right before serving.
