Dice ham and onion. Finely chop the celery and garlic. Combine all ingredients EXCEPT the shrimp and parsley in a slowcooker and cook on LOW for 6-8 hours. Put the shrimp in the slowcooker about 1 hour before serving. Sprinkle parsley into the jambalaya and serve immediately.
