    1 tbsp olive oil
    1/2 lg red onion
    2 cloves garlic, finley chopped
    1/4 cup flour
    32 oz chicken stock
    1 can corn
    2 tbsp chopped fresh cilantro
    2 tbsp lime juice
    1 tsp ground cumin
    1/2 tsp dried oregano
    1/2 tsp cayenne
    1/4 tsp salt
    1/4 tsp pepper
    3 cans great northern beans
    2 cups chopped chicken breast
    3 4 oz cans diced green chiles


Finely chop onion and sautee in olive oil with garlic until onions are clear. Mix in flour and transfer to crock pot. Add remaining ingredients and cook covered on low for at least 4 hours.

*Optional cooking method*

Cook onions and garlic as mentioned above in a medium stock pot. Add all remaining ingredients and bring to a boil. Reduce heat and simmer for 30-45 minutes.
