    -5 to 6 medium to large onions
    -1/3 cup extra virgin olive oil
    -salt and pepper
    -1 lb linguine


Makes 6 1-cup servings

Slice onions thinly. Place them in a large dry skillet. Cover the pan and turn heat to medium low. Check and stir every five minutes for 30 minutes until they begin to brown and stick to the pan. Add 1/3 cup olive oil along with a healthy sprinkling of salt and pepper. Turn the heat to medium.

Bring a large pot of water to boil.

Continue to cook the onions until they are uniformly brown and soft, 10 -20 minutes more. Salt the water and cook the pasta.

Add a little of the pasta cooking water to the onions. Drain the pasta and toss it in a warm bowl with some onions.
