Introduction

I think these would actually make better pancakes I think these would actually make better pancakes
Number of Servings: 12

Ingredients

    2 C. unsweetened soy milk (I used unfortified--fortified would add more vitamins to nutrition tracker)
    1/2 C. brown sugar
    1/4 C. applesauce, unsweetened
    1 Tbs. canola oil
    2 1/2 C. whole wheat pastry flour
    4 tsp. baking powder
    1 tsp. ground cinnamon
    1/4 tsp. salt
    1/2 C. grated carrot
    1 medium apple, chopped small

Directions

Prepare muffin tins with nonstick spray. Preheat oven to 350 degrees.

In a medium bowl, mix soymilk, brown sugar, applesauce, and canola oil.

In another bowl, mix dry ingredients. Add liquid to dry, scraping the bottom to get any brown sugar residue. Stir to combine. Add carrots and apples.

Pour into muffin cups.

Bake for 15 minutes or until muffins are golden.
