Number of Servings: 4

Ingredients

    1 tsp canola oil
    1 can light coconut milk
    2 cloves garlic, crushed
    2 tsp grated ginger root
    1/2 TB green curry paste or to taste
    16 oz raw, peeled and deveined shrimp
    15 leaves of basil, chopped
    juice of one lime

Directions

1) Saute garlic and ginger in oil over medium/high heat until fragrant.
2) Add coconut milk and green curry paste, stir to combine.
3) Add shrimp and cook until no longer pink.
4) Stir in basil.
5) Squeeze in lime juice
6) Salt to taste.
*If you like foods spicy, add alittle more green curry paste to taste.
**Optional, garnish with chopped cashews.
Serve with brown rice.
