Ingredients

    1 lb Italian sausage, casing removed (may substitute soy sausage or soyrizo)
    10 large cloves garlic, crushed or minced
    1 cup onion, chopped
    2 cans diced tomatoes plus 1 can water
    8 cups washed & chopped greens (swiss chard, spinach, kale, arugula, etc)
    1 Tbsp paprika
    6 cups chicken broth
    2 cans white beans

Directions

Break up and fry sausage. Add chopped onion and garlic. Cook til onion is soft. Add chopped greens and cook til wilted. Add remaining ingredients and bring to simmer. Simmer 15 minutes.
