Ingredients

6 medium Zucchini
15 oz container Ricotta Cheese
8 oz Mozzerella Cheese
1/4 C Parmesan Cheese (or to taste)
1 Tbs Dried Basi
1 tsp Dried Oregano
2 cups diced Ham (or substitute sausage)
1 C sliced Mushrooms
1 32 oz Jar Sugar Free Marinara Sauce of choice (I used Classico Tomato and Basil)
Salt (to taste)
Pepper (to taste)
Directions
Slice zucchini lengthwise. Mix ricotta cheese, parmesan cheese, and spices together in a bowl. Grate Mozzerella Cheese and set aside. Dice ham (or cook sausage) and slice mushrooms. In a 9 X 13 baking dish, layer sliced zucchini, spread cheese mixture then top with ham, mushrooms and marinara sauce and top off with mozzerella cheese. Repeat layers until baking dish is full. Cook at 375 for 30-40 minutes or until it bubbles and cheese is melted and browned. Test for doneness by pricking zucchini. Makes approx. 12 servings
