Ingredients

    2 tbsp olive oil
    1 medium sweet onion, diced
    6 large cloves garlic
    6-8 medium ripe tomatoes, diced
    Dash of salt
    6-8 sprigs of fresh thyme
    1 can Swanson Low-Fat, Reduced Sodium Chicken Broth

    1 - 6 oz can tomato paste
    1.5 cups reduced fat half and half
    2-3 tbsp unsalted butter
    12 large basil leaves, chopped

Directions

Add oil to a dutch oven over medium-high heat. Add onions and garlic and stir until onions become translucent. Stir in the tomatoes, the add the thyme sprigs. The leaves will fall off as it cooks and the sprigs can be removed. After a few minutes, add the tomato paste and chicken broth. cook for 5-10 minutes uncovered. Add the half and half, stir and cook on medium for 5-10 more minutes, until reduced.

Add butter and basil, cook for 5 minutes til butter dissolves completely. Remove from heat and let cool for a few minutes, then blend the sauce on puree to your liking. This sauce goes well over meat filled ravioli or other pastas. Enjoy!
