    Pizza crust (you can make this yourself using a mix of whole and white flour in two and a half cups, a hefty teaspoon of yeast dissolved in a cup of lukewarm water, a tablespoon of honey and two tablespoons of vegetable oil)
    1/2 napa cabbage (you can use a different cabbage if you wish)
    1/2 large white onion
    1 medium sized red potato sliced thinly
    1/4 cup shredded carrot
    4 oz thinly sliced mozzarella

    salt and pepper to taste
    dusting of cornmeal (optional)


Prepare the pizza dough either by making it yourself or buying it ahead. If you are making it, let it sit covered while preparing the vegetables so it can rise a little.

Preheat the oven to 400 F

sautee first the shredded half head of cabbage in a good tablespoon of oil (I like vegetable) then add, as quickly as possible, the potato, carrots and finally onion. Let them all sautee together, stirring and tossing occasionally, for about twenty-five minutes or unil most of the ingredients are soft.

Roll out the dough onto a greased pan, if you like you can sprinkle cornmeal on the top and bottom of the dough for texture and flavor. Then lay the mozarella slices over the dough in any fashion you like before spooning the vegetable mix on top. Spread evenly and put in the oven for 15-18 minutes until the crust is golden and the vegetables are soft. Slice and enjoy!
