    2 tbsp soy sauce
    1tsp sesame oil
    2tbsp dry sherry
    1 lemon grass stalk, finely shredded
    1 chilli sliced
    ½ head pak choi, divided into 8 leaves
    4 sea bass fillets
    1cm piece ginger
    2 cloves garlic, finely sliced

    Additional equipment-Greaseproof paper


Serves 4

1)Preheat the oven to 200°C/ 400°F
2)In a small bowl, mix the soy sauce, sesame oil, sherry, lemongrass and chilli and set aside
3)Take 4 large sheets of grease proof paper and on each piece place 2 leaves of pak choi and a fillet
4)Scatter over the garlic and ginger and pour over the dressing
5)Fold over the paper and twist to seal the edges
6)Bake on a tray for 5-7 minutes.
