Ingredients

    Pink Salmon, Chicken of the Sea, skinless/boneless, chunk style in water, 14.75 oz
    *Progresso Bread Crumbs - Italian Style, .5 cup
    *Mayonnaise, Hellman's Light, 3 tbsp
    *Egg Whites, 6 tbsp beaten
    *Lemon juice, 2 tsp
    *Parsley, dried, 1 tbsp
    *Garlic powder, .25 tsp

Directions

Drain and flake the salmon into a medium mixing
bowl.
Combine salmon, bread crumbs, mayonaise, lemon juice, egg whites, parsley and garlic powder - blend well.
Make 8 patties out of the mixture.
Spray a skillet with non-calorie no stick cooking spray. Put burner on medium.
Put patties into the skillet, heat both sides until they are browned, and the salmon patty is heated through.
Serve as is, or wrap in lettuce. You can also put on a bun of your choice (calories not added in).
Makes 8 patties.

  • I would use this recipe as we have to eat more seafood due to diabetes in the family. I am having salmon to-day and will use the left over for this recipe.
