A very flavorful soup that is easy to make & the whole family will enjoy! A very flavorful soup that is easy to make & the whole family will enjoy!
Number of Servings: 8


    1 12oz can of diced tomatoes (no salt ) drained
    1 12oz can of navy beans, drained
    1 med- large yellow onion, diced
    8-10 cups of chicken broth
    1 serrano pepper ( seeded to taste )& minced
    an entire head of garlic 10-12 remove skin, put in whole
    one package of chicken sausage ( I prefer the chicken apple kind )
    16 oz of baby spinach ( cut off stems if needed )


First brown the sausage, slice, set aside.
Next brown the onions in good sized soup pan, then add the beans & tomatoes- make sure they are drained well!
Then add the chicken broth, garlic, serrano pepper & chicken sausage. Simmer for 30-60 minutes. Right before serving add spinach and cover. Cook until Spinach is well wilted.
You can also add fresh grated parmesan cheese on top if desired.
