Ingredients

    1.75 lb. Chicken Breast
    Boneless/Skinless bite
    size pieces
    2 Cups Chopped Green Bell
    Pepper
    2 Cups Chopped Onion
    1 Tsp Extra Virgin Olive Oil
    1 Tbls Garlic Powder
    1 Tbls Curry Powder
    1 Tbls Paprika
    1.75 Cup Water
    2 Cup Thick & Chunky Salsa
    2 Cup Instant Brown Rice

Directions

In a large skillet add olive oil. When hot brown chicken for approx. 6 min. add onions and bell peppers, also add the spices. When bell peppers are tender set aside mixture. Add water and salsa bring toa boil add instant rice bring to a second boil, cover and simmer for approx. 5 min. When most of the liquid has been absorbed combine the chicken mixture with rice and mix well.

Makes 8 one cup servings
