Introduction

This is a recipe I got from Weight Watchers. The original recipe did not call for Cayenne Pepper but it was still very tasty. If you don't like spicey food leave the red pepper/cayenne out. For those on WW this is 3 points.
I served it with lettuce, low fat source cream and low fat cheese. It was like eating a taco.

Ingredients

    1/2 LB extra lean Ground Turkey
    1/2 LB extra lean Ground Beef
    2 Large Egg Whites
    2 oz Cornbread stuffing dry mix (about 1 cup)
    1/2 Cup chopped Onion
    1/2 Tsp Chili Powder
    1/2 Tsp Red Pepper/Cayenne
    1/4 Tsp Ground Cumin
    4 oz canned green chili peppers diced
    8 oz Enchilada Sauce

Directions

Preheat over to 375. Coat broiler pan with cooking spray or use reynolds release foil to line pan. In large bowl mix all ingredients using only half the enchilada sauce. Shape into an oval with your hands and place on prepared broiler pan. Cook for 1 hour, top with remaining enchilada sauce and bake for 5 mins more. Slice into 6 pieces and serve.

    Incredible!
    I have made this quite a few times and my family loves it, even my picky 15 year old. I drain the green chilies. This dish is the bomb! I make it with salad and corn on the cob. It is also really good the next day as a sandwich. - 2/28/10

    I tried this a few nights ago, and OH MY is it DELICIOUS!
    The WW book shows 3 pts per serving, but I got 2 pts when I calc'd the nutrition info listed here, but even at 3, it tastes great, is easy to make, and reheats well for lunch the next day! This will be one of my regulars!
