    1 T oil
    6.5 oz Flank Steak
    1/4 cup chopped onion
    2 cloves minced garlic
    3/4 cup chopped mushrooms(divided 1/4 C & 1/2 C)
    1 Laughing Cow Cheese wedge
    1/4 cup baby spinach leaves
    14 cup white wine
    18 cup beef stock or broth
    14 cup Fat free Half & Half


In saute pan (one that can be put into the oven) saute onions, garlic and 1/4 C and mushrooms, about 3-4 minutes.
Pound with a mallet the flank steak between plastic wrap to about 1/4 " thickness. Spread cheese on steak top with onion, garlic, and mushrooms saute. Top with spinach and rollsteak up. Secure with toothpicks. Brown on all sides in pan. Place pan in oven, 350 degrees F. for about 20 minutes. Remove from oven, and remove roll-up to cutting board. Cover with foil.

In pan, add wine and beef broth. Cook on med. high until reduced in half. Slowly add Half & Half .
Bring to a boil, and constantly stir until thickened. Add rest of mushrooms.

Slice roll-up and serve with mushroom sauce.
