Introduction

Adding no sodium and no gluten, make this thick and tasty soup for two from left over veggies in less than 10 minutes! Great to take to work for lunch. What a great appetizer, side dish, or light meal.

This recipe uses asparagus, potato, carrot, green onion, and ground flax with milk to make it smooth and creamy. Toss it in a Magic Bullet. When ready to eat - microwave, voila!

Ingredients

    1 c. Milk - 2%
    1/4 c. cooked asparagus
    (I used the woody ends left over from a previous dinner)
    2 cooked red potatoes
    12 cooked baby carrots
    1 chopped green onion
    1/4 tsp Penzey's Mural of Flavor (includes: spices, shallots, onion, garlic, lemon peel, citric acid, chives, orange peel)

Directions

Makes 2 - 1 cup servings

Lightly heat asparagus, potatoes, and carrots in the microwave for 1 minute

Chop green onion

Place all vegetables, milk, and spice into a large Magic Bullet mixing cup or blender. Pulse/mix until asparagus is well blended.

For Magic Bullet, add shaker top and microwave for 4 minutes longer as needed.

For blender, pour into two serving dishes and heat further as needed.
