Introduction

This sauce can be used with hard boiled eggs, cooked fish, cooked prawns or cooked chicken for a quick meal. Serve over steamed cauliflower

Number of Servings: 4

Ingredients

    1 med onion
    2 med green apples
    1 Tbs wholemeal flour
    1 Tbs curry powder (or to taste)
    2 cup coconut flavoured skim evapourated milk
    1 tsp Splenda (or to taste)

Directions

Peel and chop onion
Peel, core and chop apple
Spray non stick pan with olive oil spray
Add onion and apple and cook, gently until onion is softened
Add curry powder and stir, cooking until fragrant
Add flour and stir, cook 1min,
Gradually add milk, stirring, until mixture boils and thickens.
Stir in splenda
Add halved hard boiled eggs, or cooked chicken meat and heat through to serve
Serves 4
