Ingredients

    Tempeh, 8 oz
    Spinach, fresh, 1 cup
    Egg, fresh, 4 jumbo
    Garlic to taste
    Salt and seasonings to taste

Directions

Chop tempeh in small pieces and saute in two tbsp water with seasoning to taste. Set aside in a bowl. Let cool for a few minutes.
Add eggs to bowl and quarter cup water and whisk.
Sautee spinach and garlic until wilted. Add to egg mixture and return to hot skillet.
Cook this side for three to four minutes and turn over to cook other side.
