    2 Tbs lemon juice
    1 Tbs whole-grain mustard
    2 Tbs olive oil
    1 C canned black beans, rinsed & drained
    1 C fresh or frozen corn, thawed
    1 Avocado, diced
    1/2 C diced red bell pepper
    1/2 C coarsely chopped cilantro
    2 Green onions, trimmed & thinly sliced (1/4 C)


Makes 4 servings

Whisk together lemon juice and mustard in large bowl. Add olive oil; whisk until smooth. Add remaining ingredients, and gently toss to mix. Season with salt and pepper
