This delicious and creamy chicken is perfect over Mexican rice. This delicious and creamy chicken is perfect over Mexican rice.
Number of Servings: 8


    3 lbs of chicken breast (about 5-6 breasts)
    3 Tbs canola or olive oil
    1/2 large onion, diced
    3 c mushrooms, sliced
    Pollo Asado seasoning
    Johnny's Seasoning Salt
    1.25 c sour cream (low fat)
    2.5 c Mexican cheese, shredded
    .33 c light mayonaise (optional)


Prepare ingredients: Dice onion, slice mushrooms and cut raw chicken into bite-size chunks.

Heat oil in 12" pan over medium heat.

Saute onion until translucent. Add in chicken and mushrooms. Sprinkle both seasoning salts over the pan until there is a very visable coating over the chicken. Cook thoroughly stirring occassionally until chicken is cooked through.

Drain some of the juice off (about 1/2). Turn down heat and add in sour cream, shredded cheese, and mayo (optional). Stir together and serve over Mexican rice.
