    4 Tilapia filets
    2 tbsp flour
    2 tbsp capers
    1/4 cup white wine
    juice from 1 lemon
    2 tbsp butter
    1 tsp olive oil
    salt and pepper


Heat the olive oil in a pan over medium high heat.
Season the flour with salt and pepper. Dredge the fish through the flour and place in the pan. Saute 1-2 minutes on each side, or until the fish flakes with a fork. Remove the fish from the pan and keep warm. Add the wine, lemon juice and capers to the pan. Cook for a few seconds. Turn the heat off. Add the butter and stir until the butter is melted. Serve sauce over fish.
