A flavorful filling veggie dish! A flavorful filling veggie dish!

    1 c. Chopped Onions
    3 cloves Garlic, diced
    Choice of veggies
    (3 raw potatoes, cut into cubes)
    (3 Carrots, chopped into chunks)
    1.5 c. chickpeas
    1 lg. can stewed tomatoes
    1 small can chopped/diced tomatoes
    Spices of choice


Heat oil in large pan. Add onions and garlic and saute until soft. Add choice of veggies, putting the ones that take longest to cook in first. Examples are listed but try what you like! Add tomato products and chickpeas. Season with cumin, corriander, curry powder, salt and peper, or your choice of seasonings. Simmer until veggies are tender, usually 30-40 minutes. Add in peas and cook a few minutes more. May be served with rice or couscous for a complete meal.
