Ingredients

1 lb. shrimp
4 cloves garlic, chopped
2 tbsp olive oil
Splash white wine
1/2 cup chopped onion
1/2 cup mushrooms
2 tomatoes, chopped
1 tsp oregano
1/2 tsp basil
8 oz cooked pasta
1/2 cup feta cheese
Directions
Saute two cloves of garlic in 1 tbsp of oil. Add shrimp and white wine and saute until shrimp are pink (~5 min.) Remove shrimp from pan with slotted spoon.
Add onions and additional two cloves garlic to pan and saute until onions are translucent. (Be careful not to burn the garlic.) Add mushrooms and stir well. Add tomatoes and herbs and cook 5 min. Add shrimp and cook for another 5 min, or until warm. Toss with pasta (I prefer penne) and feta cheese.
Can also add crushed red pepper flakes if you so desire.

This was amazing--my husband now loves "diet" food, my son ate his and had seconds. I don't drink alcohol, so I added a little lemon juice which was yummy. I had to reheat after our walk, and the feta got melty over all of the pasta--made it even better! DH said it trumped the Macaroni Grill! - 1/4/10

This was deliciousssss!! It tasted like a dish you would order in a fancy restaurant... I used 1/2 a can of diced tomatos flavored with garlic, basil and oregano instead of regular tomatoes. I don't really care for tomatoes and I think it gave it some extra flavoring. Can't wait to make it again!!!! - 2/9/09
