    1 small green pepper
    1 large red, yellow, orange pepper
    1 large onion
    3 garlic cloves
    1 cup of dice tomatoes
    2 tbsp of olive oil
    Salt & pepper, basil & parsley


Saute onion & garlic, for 10 mins. Add peppers and sautee for 10 mins, add other vegs and cook for 45 mins on low heat.
