Ingredients

1 Pkg Trader Joe's Organic Brown Rice Penne
1 Can Tuna in olive oil (un-drained)
3 Coves garlic
1 Can stewed tomatoes
1 Can Cannellini Beans (drained & rinsed)
1 Tbsp. crushed red pepper flakes
25 large black olives (approximately 1 can)
1 small yellow onion, chopped
1-2 Tbsp. Italian seasoning
1 Tbsp. garlic powder
1/2 cup chopped fresh italian parsley
1/4 cup grated parmesan or romano cheese
Salt & pepper to taste
Directions
1. Fill large pot with water and begin boiling. Read package of pasta for cooking time. When the water begins to boil add salt, this will help to flavor the pasta. A little splash of olive oil in the water will keep the pasta from sticking to each other.
2. Add tuna with oil , onion and garlic, mash around until Tuna becomes a little mushy and broken down.
3. Add red pepper flakes, tomatoes, beans, olives, garlic powder & italian seasoning. Heat through over low heat for about 10 minutes. Stir occasionally, be gentle and try not to break the beans. Salt & pepper to taste.
4. Drain pasta (if done cooking) and add to skillet with tuna mixture. Add chopped parsley and fresh squeezed lemon on top. Toss pasta until coated with the sauce. Sprinkle with cheese and serve!
Makes 8 servings!
(You could also add shrimp or an other seafood you like to this. I will sometimes add to the skillet whatever fresh veggies I have in the fridge, like zucchini, mushrooms, or bell peppers.)
