Ingredients

    1 cup dry coarse bulgur wheat
    1.5 cups boiling water
    1 cup chopped fresh mint
    1 cup chopped fresh flat leaf parsley
    2 cups quartered grape tomatoes
    1/4 cup lemon juice
    1/4 cup olive oil
    1 medium cucumber, peeled, seeded and chopped coarsely
    kosher salt
    pepper

Directions

place dry bulgur in a bowl. add 1 tsp salt. Pour boiling water over the bulgar, add olive oil and lemon juice. Cover and let stand an hour or more until liquid is absorbed fully. Then add the rest of the ingredients and salt and pepper to taste. Serve immediately or refrigerate until ready to serve. Flavors will meld more the longer it sits.
