    Calories for Egg Salad Alone
    1 serving firm tofu
    1/2 tablespoon vegan mayonnaise
    1 teaspoon mustard
    1/2 tablespoon organic relish
    1 tablespoon chopped onion
    2 tablespoons chopped celery
    Salt and pepper to taste

    1 whole wheat pita pocket (130 calorie)
    10 sprigs of baby spinach
    3 mushrooms sliced
    3 grape tomatoes cut in half


Press tofu to get out as much liquid as possible. Crumble tofu with a fork until it is the size of chopped eggs. Stir in remaining ingredients and chill for one hour before eating.

When ready to serve, warm pita pocket in heated pan for about 30-60 seconds then cut in half and fill each 1/2 with some greens and eggless salad. Sprinkle with paprika before serving for extra color and flavor.
