Introduction

Ingredients

    Onions, raw, 1 cup, chopped
    Carrots, raw, 2 cup, chopped
    Vegetable bouillon, 4 tsp
    Curry powder, 1 tsp
    Chili pepper (dry), 1 tsp
    Peanut Butter, smooth style, .5 cup
    Coconut Milk, 1 cup

Directions

Cook onion until translucent. Add curry powder, chili pepper. Heat water and add bouillon. Add to onion. Bring to a boil. Add cut up carrots. Cook uncovered on medium heat for about 30 minutes or until carrots are soft. Take soup and put in blender along with peanut butter until smooth. This usually takes two separate sections of the soup in the blender. Put back into the pot, add coconut milk. Heat on low heat. Enjoy.
