Introduction

These are wonderful wholegrain rolls...they can also be made with white flour, but of course they aren't as nutritious that way! These are wonderful wholegrain rolls...they can also be made with white flour, but of course they aren't as nutritious that way!

Ingredients

    1 T baker's yeast
    1 cup warm water
    1/4 cup honey
    1/2 cup butter, softened
    3/4 tsp salt
    2 eggs (room temp is best, but not required)
    about 4 cups whole wheat flour

Directions

Dissolve yeast in warm water with honey. Let stand about 5 minutes.

When bubbly, add butter, salt, eggs and 1 1/2 cups flour. Beat well with mixer for several minutes. Add enough remaining flour to make a soft dough and knead 5-10 minutes by hand, either on the counter or in the bowl. Add flour until dough is no longer "sticky."

Let rise in warm place until double, about 30 minutes. Punch dough down and shape into about 18 rolls. Place on greased cookie sheet or in greased muffin tins. (I prefer the muffin tins.)

Let rise until double, about 30 minutes. Bake at 375 degrees about 20-25 minutes. I usually butter the tops of the rolls before removing from pan because it makes them pretty!

Note: You can mix up the dough and let it do the first rise in the refrigerator all day or even overnight if you want to bake the rolls later. Just allow extra rising time once you've formed the balls since the dough will be cold.
