Introduction

Finicky eaters will never know this meatloaf has carrots and onion in it. Other veggies such as spinach or celery can be "hidden" in it as well, should you choose to do so. Ingredients

    2 pounds lean ground Beef (or turkey), raw
    1 cup Bread Crumbs (can substtute crackers, oatmeal, crushed cornflakes, etc.)
    1 small yellow Onion coarsely chopped
    1 cup grated Carrots
    1 organic Egg
    1/2 cup no salt Ketchup
    2 teaspoons yellow Mustard
    1 tablespoon Worcestershire Sauce
    1/2 teaspoon Garlic Powder
    (Salt and Pepper to taste)

Directions

Combine all ingredients except beef and bread crumbs in a blender and blend until mixture is a thick-soup texture.

Break up beef in a large mixing bowl. Add in blender mixture and knead thoroughly. Slowly knead in bread crumbs until it holds together.

Transfer meatloaf to a 9-inch loaf pan.
Bake in a 350 degree oven for 1 1/2 hours, or until done. Remove the meatloaf from the oven and allow to sit for a couple of minutes to firm up.

Drain off any liquid (recycle it by using it for a nice treat for your pet dog). Serve it in thick slices with brown sugar, ketchup or mustard for garnish. Serves 8.
