Introduction

I made this bread for a treat at work. It was wonderful. I think it would be great made with Whole Wheat flour and dried cranberries too. I made this bread for a treat at work. It was wonderful. I think it would be great made with Whole Wheat flour and dried cranberries too.

Ingredients

    2 cups peeled, cored and chopped apples
    3/4 cup Sugar
    2 TBSP Vegetable oil
    1 egg
    1 1/2 C. All purpose flour
    1 1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1 tsp ground Cinnamon
    1/2 c. water
    1 cup fresh or frozen whole cranberries
    1/2 cup chopped walnuts

Directions

1. Preheat oven to 350 F. Lightly grease a Loaf pan

2. Combine apples, sugar, oil and egg. Stir well

3. Combine Flour, Baking powder, baking soda and cinnamon in a separate bowl

4. Add flour mixture to apples, stir well. Add in water to form batter

5. Add cranberries and walnuts, stir well

6. Spread batter into pan. Bake 35 to 45 min until toothpick comes out clean from center of loaf.

    Really great! I used orange juice instead of water to give it a little extra zing, and I left out the nuts. - 12/22/10

    I had lots of pineapple from a produce co-op so I subbed it. I think I should have left out some of the water. Still great flavor loved this recipe. - 1/15/12
