Number of Servings: 30

Ingredients

    8 tbsp Smart Balance
    8 oz fat free cream cheese
    1 1/4 c. white sugar
    1/2 c. egg beaters
    1 c. mashed bananas
    1 tsp vanilla extract
    2 c. wheat flour
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    3/4 c. chopped pecans
    2 tbsp brown sugar
    2 teaspoons ground cinamon

Directions

1. cream the butter and cream cheese together. Gradually add the white sugar and continue beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the mashed bananas, vanilla, pecans brown sugar and cinnamon. Add flour, baking powder, and soda: mix until batter is just moist.

2. Divide 1/2 batter into two greased and flouerd 8x4 inch loaf pans.

3. Bake at 350 degrees F for 45 mins. or until an inserted toothpick comes out clean.

serving size is about one finger width, cuts 3/4 inch
