    1 lb yellow (summer) squash
    1.3 lb zucchini
    1 lg onion
    1 can DelMonte Diced Tomatoes with Basil, Garlic & Oregano
    1 1/2 oz parmesan cheese, shredded


1. Preheat oven to 350

2. Cut squashes into 3/4-inch slices and then cut in half. Cut onion into 1/4-inch slices and then cut in half. Stir to combine and then place vegetables in a large casserole.

3. Pour Diced Tomatoes over the vegetables. Bake, covered, for 30-45 minutes until the squash is a consistancy that you like. (30 minutes will be firmer and 45 will be pretty soft.)

4. Remove from oven and garnish with cheese. Serve.
