Number of Servings: 6


    6 large eggs
    1/4 cup half-n-half
    salt and pepper to taste
    1 TBS baco bits
    1/2 cup fresh broccoli, snip the tops with kitchen sissors into small pieces so it cooks quickly
    4 medium portabella mushooms chopped
    2 TBS grated raw onion
    2 ounces grated cheddar cheese
    4 Cherry tomatoes quartered and halved again
    Enough olive oil to coat cast iron skillet


Preheat oven to 350, then reduce heat to 325 when you put quiche in.
Prepare veggies and cheese and set aside.
Whip eggs and cream until slightly stiff.
Fold eggs into veggie mixture.
Pour into greased cast-iron skillet.
Bake 30-40 minutes until middle is done and let cool about 10 minutes before slicing and serving.
Makes 6 nice servings if you are using side dishes such as a salad or fruit.
