Ingredients

    8 large eggs
    1/2 medium onion, chopped
    1 medium tomato, diced
    1/2 large zucchini, cubed
    75 grams lean ham, cubed
    pad of butter (to grease the pan)
    Salt and Pepper to taste

Directions

Pre-heat the oven to 350. Grease a 9"x9" baking pan. Use a fork to whip the eggs in a bowl until well blended. Set aside. Chop the onion, dice the tomato and cube the zucchini and ham; add to the eggs and stir until well blended. Pour into the greased baking dish and bake for 20 - 25 minutes, until the eggs are set. Serves 4
