Fast, easy and delicious. Great served with a grilled cheese for dunking. :-) Fast, easy and delicious. Great served with a grilled cheese for dunking. :-)
Number of Servings: 4


    1/2 tsp olive oil

    1 tsp light margarine or butter

    1 lb potatoes, peeled and cubed

    2 leeks, cut in half longway and the half moons through all the white and just an inch of the green

    3 garlic cloves, minced

    4 c vegetable broth

    salt and pepper to taste


Makes 4 - 1 cup servings

In a large sauce pan saute' leeks and garlic with the olive oil and butter for approximately 2-3 minutes.

Add potatoes, broth and desired seasoning. Bring to a boil. Continue to simmer until potatoes are tender. Approximately 10 -15 minutes.

In two batches blend soup in a blender. Enjoy!!!
