Ingredients

    2 Tbsp best quality olive oil
    .5 cup finely chopped sweet onion
    2 cloves garlic, passed through a garlic press
    .5 cup tomato paste
    1 Tbsp amber gave nectar
    1-2 Tbsp unsulfured blackstrap molasses
    1 Tbsp Dijon mustard
    .5 cup water
    2x 19oz. cans white kidney beans, rinsed and drained
    1 multigrain baguette cut on the diagonal in .25 inch slices (I use ezekiel bread)
    2 cup fresh salad greens- mesclun mix, baby spinach, argula, or your choice
    2 Tbsp chopped cilantro

Directions

1. In medium skillet heat olive oil over medium heat. Sautee chopped onion and garlic until soft, about 4 minutes.

2. Add tomato paste, agave nectar, molasses, Dijon mustard, water, and kidney beans. Heat through. Turn off heat and let sit.

3. Meanwhile, toast baguette until crispy. Set aside.

4. Prepare plates for two. Place cup of salad greens on each plate. Arrange toast on the side.

5. Spoon bean mixture on toast. Garnish with cilantro. Serve.
