Number of Servings: 12


    2 cups self raising flour
    pinch of salt
    1 tbsp malt extract or treacle
    1 cup warm milk
    1 cup of combined fruit (raisins/currants/sultanas)
    6- 8 chopped and pitted dates
    1 cup of soft dark brown sugar


Pre heat the oven 180.C, 350.F or gas mark 4
line and grease a medium sized loaf tin

Sieve flour and salt together in one bowl

Mix the fruit, sugar and dates in another bowl

Dissolve the malt extract ( or treacle) in the warm milk and then add to the fruit - mix with a metal spoon

Add the flour mixture and stir well - it will look a bit odd to start with but just keep mixing until smooth

Pour into the loaf tin and cook for 1 hr middle of the oven - once cooked remove from the tin, remove the paper and cool on a wire rack.

This should make 12 1/2 inch slices - yoiu might get 14 depending on the tin
