This is the easiest chicken salad for a quick bite to eat! This is the easiest chicken salad for a quick bite to eat!
Number of Servings: 3


    1-6oz. can of canned chicken breast-98% fat free, packed in water

    1/4c. onion-chopped to preference

    1 celery stalk chopped

    1/4c. green bell pepper

    2 tbsp. Kraft -Light Miracle Whip

    dash of black pepper


Open canned chicken breast and drain water. Place chicken into a mixing bowl. Chop your onion, green pepper and celery. Add all ingredients into the mixing bowl and stir with a fork. I shred the chicken apart as I am mixing. Serve alone, over a bed of lettuce or your choice of carb! Don't forget to add it the calories. I usually eat this in a Weight Watchers Whole Wheat Pita and put a few slices of tomato on top. You can substitute the Miracle Whip for your choice of Mayo. Just change the calories. My husband loves this one for a quick lunch!
