    1 1/4 cup sugar
    1/4 cup fat free vanilla yogurt
    1/4 cup margarine
    1/2 cup egg beaters
    1 1/2 cup mashed bananas (3-4 bananas)
    1/2 cup low-fat buttermilk
    1 tsp vanilla
    2 1/2 cups whole wheat flour
    1 tsp baking soda
    1 tsp salt


Makes 2 loaves (12 servings each)

Heat oven to 350 degrees. Spray bottom of 2 loaf pans with non-stick spray.

Mix sugar, yogurt and margarine in a mixer on low speed until well blended. Add egg beaters, bananas, buttermilk, and vanilla and mix well. Stir in flour, baking soda, and salt until just moistened.

Pour evenly into pans. Bake 1 hour to 1 hour 1 minutes. Cool for 10 minutes. Loosen sides and turn onto wire rack to cool. Cool completely before slicing.
