    2 c. chopped broccoli
    1/3 c. chopped onion
    1/2 c. chopped green bell pepper
    1 c. shredded Cheddar cheese
    1 c. milk
    1/2 tsp. salt
    1/4 tsp. black pepper
    2 eggs
    1/2 c. Original Bisquick Mix


Preheat oven to 400 degrees. Grease 9-inch pie plate. Heat 1-inch salted water to boiling in medium sauce pan. Add broccoli; cover and heat to boiling. Cook about 5 minutes or until almost tender. Drain thoroughly. Stir together, cooked broccoli, onion, bell pepper and cheese in pie plate. Stir Bisquick mix, milk, salt, pepper and eggs until blended. Pour mixture into pie plate. Bake 35-45 minutes or until golden brown and knife inserted in center comes out clean. Cool 5 minutes.
Makes Eight 2-inch servings

  • Not a bad dish. I believe I used broccoli normandy (cauliflower and carrots) from a frozen, but thawed bag. It was very filling and good. - 10/14/10
